Vegan Moorish kebabs
You cannot call a barbecue "a proper barbecue" without skewers. So we have included these vegan Moorish kebabs made out of textured soy as part of our cool summer recipes. Because making a 100 % vegan barbecue that everybody can enjoy is good and it is real.
Servings for 2
Place the garlic and onion in a food processor with half the lemon juice, a bunch of coriander, and olive oil. Grind.
Then, add spices and salt.
Hydrate soy protein in hot water for 10 minutes. Strain and combine with the spices in the food container.
Close and toss well. Set it aside to macerate at room temperature for 2 hours.
Assemble the skewers with the marinated soy protein and cook on the barbecue until golden brown.
