We have looked up in the recipe book of our close peninsula neighbours, and there is no doubt: we choose cod with cream. One of the most well-known Portuguese recipes and we can totally understand why. Amazing taste!

Preparation
Preheat the oven at 220ºC (top and bottom).
In a large pan, melt butter, add flour, and stir. Pour cream and water.
Add black pepper and nutmeg.
Add bacalao and fried potatoes, combining everything.
Place cod with grated cheese on the top into recipients for one. Cook au gratin at 220ºC for 10 minutes.
Serve this cod with hot cream to enjoy flavour completely, as well as that melting cheese elasticity.
