Description
Probably the best sweet potatoes recipe you have ever eaten. Not to speak of the aromatic tase, of course.
Ingredients
Servings for 2
Big sweet potatoes
2
Small onion, chopped

Small apple, chopped
1
Cloves of garlic

Tin chickpeas

Tablespoons of ras-al-hanout
2
Tablespoons of honey
2
A bunch of coriander
1
Salt
Pepper
Greek yoghurt

Teaspoon of smoked paprika

Preparation

Wash sweet potatoes and cut in half lengthwise. Place in an oven tray and bake for 30-40 minutes, 200ºC, until tender.

Stir fry the onion and apples in a frying pan with oil for 3 minutes.

Add the minced garlic and cook for 4 more minutes.

Then, add chickpeas, spices, salt, and pepper, stir and fry for 5 minutes.

Toss with honey and set aside. Sprinkle chopped coriander over the top and reserve.

Scoop out the sweet potatoes and fill with the chickpeas mix.
Chef's tip
Serve with the rest of the coriander and yoghurt to dip.
