Slice eggplant and place it in a platter suitable for oven.
Cover the eggplant layer with tomato sauce, basil leaves, and diced mozzarella.
Repeat this process as many times as you wish. We have done two layers for this recipe with aubergine, tomato, and mozzarella.
Add some olive oil all over the plate and bake for 30 minutes at 180ºC.
