Carnival means party, good mood, music, colour, masks and disguises. Traditions, parodies and fun take the cities and villages streets in Spain but, if there is something we love as much or even more than a good party, is fine eating.
We travel to the Canary Islands this year from our kitchen to pay tribute to their world-famous carnival with the 5-star dish: the mojo picón. We disguise this traditional recipe to create 3 different, colourful mojos, to serve with delicious "papas arrugás" (tasty boiled potatoes) to enjoy these holiday and party days.
