Batch Cooking: Bean salad, cauliflower “wings”, almond cake, strawberry and banana smoothie, caramelised sesame

Even though we now have time to cook and enjoy recipes at home, organizing your weekly menu and optimizing the ingredients is an important task. That’s why we’re getting down to business with new Batch Cooking recipes.


Bean salad

  • 1 cup of beans
  • 4 cherry tomatoes
  • Lettuce leaves to taste
  • 2 tablespoons of sweet corn
  • 1 avocado
  • A few radishes

Cauliflower “wings”

  • 1 small cauliflower
  • 1/2 cup of breadcrumbs
  • 1/3 milk or water cup with 5 tablespoons of flour
  • 1 pinch of salt
  • 1 pinch of hot paprika and turmeric
  • 1 tablespoon of garlic powder

Almond cake

    • 1/3 cup of almond flour
    • 1/4 all-purpose flour
    • 2 tablespoons of margarine
    • 2 tablespoons of vegetable milk
    • 1/3 cup of sugar
    • 1 pinch of salt
    • 1 tablespoon ground flax seeds + 3 tablespoons water
    • 1 teaspoon of baking powder
    • 1/2 cup flaked almonds
    • 1/4 tablespoons of sugar
    • 2 tablespoons of margarine
    • a few drops of vanilla (optional)

Strawberry and banana smoothie

  • 1 cup of strawberries
  • 1 tablespoon of chia seeds
  • 1 banana
  • 1 cup of water

Caramelised sesame

  • 1/2 cup of raw sesame seeds
  • 2 tablespoons of sugar

Bean salad

Mix all the ingredients on a plate and serve with your favorite dressing.


Cauliflower “wings”

Cut the cauliflower into small pieces and cook them with boiling water until they soften a little.

In one bowl, mix the flour with the water and in another, mix the breadcrumbs, salt, garlic, turmeric and paprika.

Soak the cauliflower “wings” in the flour and water mixture and then coat them with the breadcrumbs.

Sauté with plenty of oil until golden brown.


Almond cake

Preheat the oven to 180º C.

Melt the margarine in the microwave and in a glass mix the flax seeds with the water.

In a bowl mix the flour, the baking powder and the salt. In another bowl mix the milk, the flax mixture with water, the margarine and the sugar.

Join the two bowls by adding the dry ingredients to the liquid ones.

Pour the contents into a 16 cm pan (floured and with baking paper) and bake for 35 minutes.

Meanwhile, prepare the caramelized almonds.  Add the sugar, margarine and flaked almonds in a saucepan over low heat and let the sugar caramelise and have consistency.

When the cake is done, pour the contents on top and bake for about 10 more minutes.


Strawberry and banana smoothie

Put the ingredients in a mixer and blend until you get the smoothie.


Caramelised sesame

In a pan add the sesame seeds and sugar and mix well. Let it cook over low heat until the sugar melts and the seeds are golden brown.
