Perhaps in a few hours we will regret what we are about to say, but we are looking forward to Monday already. And not because we are crazy about going back to work, but because we are looking forward to trying these incredible Batch Cooking recipes that we have cooked today for the whole week.
Ingredients
Rice spaghetti with soy sauce and vegetables
- Half pack of rice spaghetti
- 1 tablespoon of sweet corn
- 2 tablespoons of soy sauce
- Half green pepper
- A piece of red pepper
- 1 cup of sliced mushrooms
- ½ chopped onion
- 1 minced garlic clove
- 5 asparagus
Breaded tofu with carrot and curry sauce
- A package of tofu
- 1/4 cup of flour + 5 tablespoons of water
- 1/2 cup of breadcrumbs
- 1 tablespoon of paprika
- Pinch of salt
- 1/2 onion
- 2 sliced carrots
- Vegetable stock cube with 1/3 cup of water (or just water)
- 1 tablespoon of curry
- 1 tablespoon of garlic powder
Rice with karma sauce
- 2 cups of rice
- 1 piece of red pepper
- 1 piece of eggplant
- 1 tablespoon of turmeric
- 1 tablespoon of curry
- 1 tablespoon of cornstarch
- 1/3 water or vegetable broth
- 5 mushrooms
Yogurt sponge cake
- 1 vegan yogurt
- 3 cups of flour
- 2 cups of sugar
- 1/2 cup of vegetable oil
- 1/2 cup of vegetable milk
- 1 tablespoon ground flax seed and 3 tablespoons water
- 1 packet baking powder
- Orange zest (optional)
Rice spaghetti with soy sauce and vegetables
Wash and cut the peppers and asparagus and sauté them with onion, garlic, corn and mushrooms until golden. Add soy sauce and stir.
Put the rice spaghetti to soak in hot water and when they are soft add them to the pan.
Stir everything very well until the vegetables are integrated with the spaghetti.
Breaded tofu with carrot and curry sauce
Cut the tofu into thin slices.
In a bowl mix the flour with the water and in another bowl mix the breadcrumbs with the garlic powder, salt and the paprika.
Pass the tofu slices through the flour and water mixture and then coat them with the breadcrumb mixture.
Stir-fry until golden brown.
For the sauce, fry the onion, garlic and carrots in a pan until golden.
Add curry and vegetable broth or water and let it cook a little more.
Put it in a mixer and grind until there are no lumps. You can add more water if you see that it is too thick.
Rice with karma sauce
Cook the rice while you fry the vegetables in a pan.
Once they are golden brown, add curry and turmeric, and then stir.
Mix the cornstarch with the broth and add it to the pan. Let it thicken a little.
Yogurt sponge cake
Using the measurements of the yogurt cup, put all the ingredients in a bowl and stir until obtaining a homogeneous mass.
Pour the dough into a floured pan and bake for about 35 minutes at 180º C in a previously preheated oven or until the moment that you prick it with a wooden stick and it comes out clean.
