Una vez derretido, lo dejamos templar y a\u00f1adimos la nata para hacer una crema. Reservamos."},{"paso":"Por otro lado cogemos las yemas de huevo y las batimos con el az\u00facar hasta que aumenten de tama\u00f1o y blanqueen. A\u00f1adimos el az\u00facar invertido (o la miel si no tenemos az\u00facar invertido) y reservamos."},{"paso":"Integramos ambas mezclas y disponemos en un bol si vamos a hacer el helado de modo manual en  el congelador o en la heladera."},{"paso":"Recuerda que si lo haces poniendo el helado en el congelador, deber\u00e1s sacarlo cada 20-30 minutos durante varias veces para batirlo en\u00e9rgicamente y evitar as\u00ed la formaci\u00f3n de los desagradables cristalitos, aunque es un helado muy graso y es dif\u00edcil que no te quede un  helado cremos\u00edsimo."},{"paso":"Por otro lado preparamos las peras caramelizadas pel\u00e1ndolas y cort\u00e1ndolas en cubitos. Las ponemos en una sart\u00e9n con la mantequilla hasta que est\u00e9n un poco doradas."},{"paso":"A\u00f1adimos las cucharadas de az\u00facar moreno y dejamos a fuego suave durante unos 15-20 minutos hasta que queden transparentes y caramelizadas por completo."},{"paso":"Reservamos la mitad de las peras caramelizadas para decorar y a\u00f1adimos el resto al helado cuando este ya lleve un rato en el congelador o en la heladera y tenga algo de consistencia.
