Enjoy this theme menu and give a new flavour to your week.<\/p>\n<h2>Ingredients<\/h2>\n<h3 style=\"text-align: left\">Homemade coleslaw<\/h3>\n<ul>\n<li>\u00bc Cabbage<\/li>\n<li>\u00bc Red cabbage<\/li>\n<li>2 Carrots<\/li>\n<li>Mint leaves<\/li>\n<li>Olive oil<\/li>\n<li>Lime juice<\/li>\n<li>Salt and pepper<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<h3>Chicken skewers<\/h3>\n<ul>\n<li>1 Chicken breast<\/li>\n<li>\u00bd Onion<\/li>\n<li>\u00bd Green pepper<\/li>\n<li>Long, wood skewers<\/li>\n<li>Olive oil<\/li>\n<li>Salt and pepper<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<h3>Fish tacos<\/h3>\n<ul>\n<li>4 Hake fillets<\/li>\n<li>2 Beaten eggs<\/li>\n<li>Wheat flour (for coating)<\/li>\n<li>Coleslaw<\/li>\n<li>Corn tortillas<\/li>\n<li>Lime juice<\/li>\n<li>Fresh coriander<\/li>\n<li>Olive oil<\/li>\n<li>Salt and pepper<\/li>\n<\/ul>\n<h3>Mexican soup with chicken<\/h3>\n<ul>\n<li>2 Tomatoes<\/li>\n<li>1 Clove of garlic<\/li>\n<li>1 Tablespoon of tomato paste<\/li>\n<li>\u00bd Tablespoon of aj\u00ed panca paste<\/li>\n<li>500ml Chicken broth<\/li>\n<li>2 Corn tortillas<\/li>\n<li>Feta cheese<\/li>\n<li>Olive oil<\/li>\n<li>Salt and pepper<\/li>\n<\/ul>\n<h3>Lionesas (profiteroles) with whipping cream<\/h3>\n<ul>\n<li>100g Flour<\/li>\n<li>2 Eggs<\/li>\n<li>50g Butter<\/li>\n<li>5g Sugar<\/li>\n<li>3g Salt<\/li>\n<li>80ml Milk<\/li>\n<li>125ml Whipping cream<\/li>\n<li>40 g Sugar<\/li>\n<li>Icing sugar<\/li>\n<\/ul>\n<p><img decoding=\"async\" loading=\"lazy\" class=\"alignnone wp-image-74399 size-full\" src=\"http:\/\/cookinglovers.teka.com\/wp-content\/uploads\/2021\/09\/batch-cooking-ingredients-1.jpg\" alt=\"Mexican Batch Cooking ingredients\" width=\"700\" height=\"436\" srcset=\"http:\/\/cookinglovers.teka.com\/wp-content\/uploads\/2021\/09\/batch-cooking-ingredients-1.jpg 700w, http:\/\/cookinglovers.teka.com\/wp-content\/uploads\/2021\/09\/batch-cooking-ingredients-1.jpg 480w\" sizes=\"auto, (min-width: 0px) and (max-width: 480px) 480px, (min-width: 481px) 700px, 100vw\" \/><\/p>\n<h2>Coleslaw<\/h2>\n<ol>\n<li>Cut all the vegetables into fine strips with a knife or with a mandoline.<\/li>\n<li>Place them in a big bowl and season with olive oil, lime juice, salt and pepper to taste.<\/li>\n<li>Decorate with mint leaves.<\/li>\n<\/ol>\n<h2>Chicken skewers<\/h2>\n<ol>\n<li>Cut the breast into big dices and season with salt and pepper.<\/li>\n<li>Cut onion and green pepper into big square portions too.<\/li>\n<li>Skewer the chicken dices and the onion with green pepper, one at a time.<\/li>\n<li>Heat a frying pan with oil and cook the chicken skewers evenly until golden brown.<\/li>\n<\/ol>\n<h2>Fish tacos<\/h2>\n<ol>\n<li>Season hake fillets with salt and pepper and coat, dip in egg batter first, then in flour. Deep fry and set aside.<\/li>\n<li>Heat corn tortillas in a pan without oil until brown and set aside, covered with a clean tea towel.<\/li>\n<li>Assemble tacos with a corn tortilla, a coated hake fillet, a bit of coleslaw, and season with lime juice and fresh coriander leaves.<\/li>\n<\/ol>\n<h2>Mexican soup with chicken<\/h2>\n<ol>\n<li>Peel and dice tomatoes, frying them in a saucepan with oil together with garlic.<\/li>\n<li>Add tomato and aj\u00ed paste and cook for a few more minutes.<\/li>\n<li>Add chicken broth and bring it to a boil, cook for 10 minutes. Blend with a mixer for a smooth soup and season with salt and pepper to taste.<\/li>\n<li>Cut corn tortillas into strips and fry deep fry.<\/li>\n<li>Serve soup with fried corn strips, a bit of Feta cheese crumbs, and a lime segment.<\/li>\n<\/ol>\n<h2>Lionesas (profiteroles) with whipping cream<\/h2>\n<ol>\n<li>Heat milk and butter in a saucepan. Add salt and sugar and bring it to a boil. Then, add flour at once and stir to get a dough.<\/li>\n<li>Remove from the heat and, when the dough is warm, add one egg, stir until integrated and add the second one, stirring again until everything is well-combined.<\/li>\n<li>Put the dough in a piping pastry bag and place portions on an oven tray with parchment paper. Bake at 180\u00baC for 15-20 minutes.<\/li>\n<li>Whisk whipping cream and sugar until it forms peaks. Put in a piping bag.<\/li>\n<li>Cut the lionesas (or big profiteroles) in half with a knife and fill with the whipping cream.
